  1. Pâte sablée :dans un saladier, mettre la farine tamisée puis le sel, le sucre glace et le beurre doux en morceaux,pétrissez.
  2. Ajoutez l oeuf et mélangez.

    Décuvez la pâte sur le plan de travail et fraser si nécessaire la pâte en l écrasant avec la paume de la main sur le plan de travail 2 ou 3 fois max.
  3. Récupérez la pâte et faire une boule divisée en 2.

  10. Au bout de 20min, fondre le chocolat au bain marie.
  11. Portez la crème infusée a ébullition. La verser a travers une passette en 3 fois sur le chocolat fondu. Mélangez a chaque ajout avec une spatule du milieu vers l extérieur pour créer un noyau brillant afin d obtenir une belle émulsion.
  12. Ajoutez les 540ml de crème liquide froide en 3 fois et mélangez. Filmez au contact.

  14. Sortir la ganache et fouettez doucement.
  15. Quand elle est à moitiée montée, ajoutez le mascarpone. Vous pouvez l ajouter en 2 fois.
  16. Fouettez a vit max jusqu a obtenir une ganache montée onctueuse, aérienne et ferme.
