Recette unique car j'ai utilisé des bonnes grosses saucisses de Morteau (rien à voir avec le sud ouest, elles viennent de Bellefort) mais j'avais ça en stock, fallait les passer 😉

  1. 800 g mojette
  2. 1 boîte confit de canard
  3. 500 g saucisses de Toulouse
  4. 2 saucisses de Morteau
  5. 2 oignons clouté
  6. 4 carottes
  7. Bouquet garnie
  8. 1 kg concassées de tomates
  9. 1/2 tête d'ail

Steps to make to make Cassoulet

  1. J-3 : tremper les haricots dans 2 à 3 l d'eau fraîche pdt 24h
  2. J-2 : égouter les haricots, les mettre dans une marmite avec les oignons clouté, carotte, bouquet garnie et les saucisses de Morteau.
    Mouiller à hauteur et laisser frémir doucement pdt 3 à 4h.
    Saler à mi cuisson.
  3. Laisser refroidir jusqu'au lendemain
  4. J-1 : égouter les haricots en réservant le jus de cuisson, ainsi que les Morteau
  5. Faire colorer les cuisses de canard, puis les saucisses de Toulouse (dans la graisses de canard bien sûr), réserver les viandes
  6. Faite revenir l'ail haché, verser la concassées de tomates puis les haricots et deux louches de bouillon (jus de cuisson), bien mélanger, rectifier assaisonnement.
  7. Dans un plat en tere cuite, verser les haricots à mi hauteur, disposer les cuisses de canard, les Toulouses coupé en deux et les saucisses de Morteau en rondelles.
    Couvrir des haricots restants
  8. Cuire pendant 3h à 160 deg au four puis laisser refroidir jusqu'au lendemain
  9. Jour J : rajouter du bouillon à hauteur, badigeonner la surface de graisse de canard et parsemé de chapelure, cuire au four à bois (quand on en a un 😁) pdt 2 à 3h à 160.
